If you have lived in Denver long enough, you remember the Spring Fling cake. For decades it was the showpiece of The Market in Larimer Square, the zucchini-sponge-and-fresh-fruit cake people ordered for birthdays, baby showers, and graduations, until The Market closed in 2020 after 42 years and the Spring Fling quietly disappeared with it. Our Spring Fling Crown Cake is Chef Asal's from-scratch tribute to that Denver classic. Three layers of tender, moist zucchini sponge, subtly spiced and impossibly soft, are embraced in velvety butter cream cheese frosting, creating a foundation that is both comforting and refined. The cake is then adorned with a breathtaking crown of fresh fruit arranged in concentric rings: golden mango on the outer ring, bright kiwi within, followed by ruby strawberries, and deep blackberries at the center. A delicate apricot glaze adds a luminous sheen to every piece of fruit. It is the cake a lot of Denver has been missing, reborn by a pastry chef trained at Auguste Escoffier, The Brown Palace, and Amaury Guichon's academy.
