If you have lived in Denver long enough, you remember the Spring Fling cake. For decades it was the showpiece of The Market in Larimer Square, the cake people ordered for birthdays, baby showers, graduations, and Mother's Day. When The Market closed in 2020 after 42 years, the Spring Fling quietly disappeared with it, and a lot of people have been missing it ever since.

What the Spring Fling cake is

It is not your typical layer cake. The Spring Fling starts with a moist, lightly spiced zucchini sponge, gets layered and frosted with tangy cream cheese frosting, and is finished with a crown of fresh fruit, usually mango, kiwi, strawberries, and berries, arranged in bright concentric rings. The original recipe was beloved enough that it was printed in the old Rocky Mountain News, which is part of why so many Denver families still have it filed away in a drawer somewhere.

Our Spring Fling Crown Cake is Chef Asal Alani's from-scratch tribute to that Denver classic. Three layers of tender zucchini sponge are wrapped in velvety butter cream cheese frosting, then crowned with golden mango, bright kiwi, ruby strawberries, and deep blackberries under a luminous apricot glaze. We are not claiming to be The Market, and this is our own version rather than their exact recipe. What we bring to it is the technique: Chef Asal trained in the French tradition at the Auguste Escoffier School, refined her craft at The Brown Palace Hotel, and studied at Amaury Guichon's Pastry Academy.
